Hm what’s better than pure peanut butter on a toast? Ehm – PB and chocolate chips in a muffin and on a muffin!! So now I present you my latest experiment with special ingredients in muffins and toppings. I loved this topping so much that I remade it 2 times and ate it on a toast!
For the muffin recipe click here! and then add 2-3 large Tbsp (Esslöffel) peanut butter to the batter. And you can add 1-2 hands of chocolate chips, too, if you like.
For the Topping:
– 3 heaped Tbsp margarine
– 2 heaped Tbsp peanut butter
– 2 Tbsp powdered sugar
– 1 Tbsp cacao (optional)
– 2-3 Tbsp soya yoghurt
mix all ingredients either by hand or use a blender/mixer. Store it in the fridge and maybe take it out if the fridge 10 minutes before you wnat to use it, if you like it to be a smooth creme.
Tip: if you’re allergic to peanuts or if you just don’t like it at all, you can replace peanut butter by any other nut butter (like almond or hazelnut or cashew butter).
Enjoy your muffins/cupcakes and use as much topping as you like! As you can see on the picture below, my layer of topping was almost half the hight of the muffins. Haha. I really love this creme!! Bisous bisous, Luu
